Sweet potato fries with chimichurri

For: 2 portions
1. To make the chimichurri, wash and shake dry the herbs, then chop very finely. Peel and crush the garlic. Cut the chilli in half, remove the seeds and also chop finely.
2. Cut the lime in half and press out the juice. Mix the herbs, garlic and chilli with the lime juice and 100 ml olive oil and season with a pinch of salt. Remove the pomegranate seeds and put aside.
3. Wash and dry the sweet potatoes, then cut into thin slices leaving the skin on. Mix the sweet potato slices with the rest of the olive oil in a bowl. Heat a grill pan and cook the potato slices on both sides for 3-4 minutes until crispy.
4. Arrange the sweet potato slices with the chimichurri and pomegranate seeds and serve.
